Ingredients

Cake Batter
  • 2.5 cups all-purpose flour sifted
  • 2.5 tsp baking powder
  • 0.5 tsp salt
  • 1 cup unsalted butter softened
  • 1.75 cups granulated sugar
  • 4 large eggs room temperature
  • 2 tsp vanilla extract
  • 1 cup whole milk room temperature
Buttercream Frosting
  • 1 cup unsalted butter softened
  • 4 cups powdered sugar sifted
  • 2 tbsp heavy cream
  • 1 tsp vanilla extract
  • sprinkles for decoration
  • fresh berries for garnish

Equipment

  • Mixing Bowls
  • Electric mixer
  • Cake pans
  • Spatula
  • Cooling rack

Method

  1. Preheat the oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  4. Gradually mix in the dry ingredients alternately with milk, starting and ending with the flour mixture, until smooth.
  5. Divide the batter evenly into pans and bake for 25–30 minutes or until a toothpick inserted comes out clean.
  6. Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
  7. For frosting: beat butter until creamy, then add powdered sugar gradually. Mix in heavy cream and vanilla extract until smooth and fluffy.
  8. Frost and layer the cooled cakes, then decorate with sprinkles and fresh berries for a festive finish.
