Ingredients
  

Sponge Cake
  • 1 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 5 large eggs separated
  • 1 cup sugar divided
  • 1/3 cup whole milk
  • 1 tsp vanilla extract
Milk Mixture
  • 1 can evaporated milk (12 oz)
  • 1 can sweetened condensed milk (14 oz)
  • 1/4 cup whole milk
Topping
  • 1 1/2 cups heavy whipping cream
  • 3 tbsp sugar
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x13 baking dish.
  2. Whisk flour, baking powder, and salt in a bowl.
  3. Beat egg yolks with 3/4 cup sugar until pale. Stir in milk and vanilla.
  4. In another bowl, beat egg whites to soft peaks. Add remaining 1/4 cup sugar and beat to stiff peaks.
  5. Fold egg yolk mixture into flour mixture, then fold in egg whites. Pour batter into dish.
  6. Bake 30 minutes. Cool completely.
  7. Pierce cooled cake all over with a fork. Mix evaporated milk, condensed milk, and whole milk. Pour over cake. Chill 1 hour.
  8. Whip cream, sugar, and vanilla to stiff peaks. Spread over cake before serving.
