Ingredients
  

Cake Batter
  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 3/4 cup unsalted butter softened
  • 3 large eggs
  • 1 cup pumpkin puree
  • 1/2 cup milk
Frosting
  • 1/2 cup cream cheese softened
  • 1/2 cup unsalted butter softened
  • 2 1/2 cups powdered sugar sifted
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line two 9-inch cake pans.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, beat butter and both sugars until light and fluffy. Add eggs one at a time, then mix in pumpkin puree.
  4. Gradually alternate adding the dry ingredients and milk into the wet mixture until smooth.
  5. Divide the batter evenly into pans and bake for 30–35 minutes, or until a toothpick inserted comes out clean.
  6. Let cakes cool completely before frosting.
  7. To make frosting, beat cream cheese and butter together. Add powdered sugar gradually and mix until fluffy, then stir in vanilla.
  8. Frost the cooled cakes, stacking them as desired. Decorate with autumn leaves, berries, or Thanksgiving-themed toppers.
