Strawberry Cupcakes

These delicious strawberry cupcakes combine fresh strawberries with a soft, moist batter and creamy frosting for the perfect dessert.

Ingredients
  

  • all-purpose flour 1 cup
  • unsalted butter 1/2 cup softened
  • granulated sugar 1 cup
  • large eggs 2
  • vanilla extract 1 tsp
  • baking powder 1/2 tsp
  • baking soda 1/4 tsp
  • buttermilk 1/2 cup
  • fresh strawberries 1 cup chopped
Frosting

Method
 

  1. Preheat the oven to 350°F (175°C) and line a cupcake tray with paper liners.
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs, one at a time, and then add vanilla extract.
  4. In a separate bowl, mix the flour, baking powder, and baking soda.
  5. Alternate adding the dry ingredients and buttermilk to the wet mixture, beginning and ending with the dry ingredients. Mix until just combined.
  6. Gently fold in the chopped strawberries.
  7. Spoon the batter into the cupcake liners, filling them about two-thirds full.
  8. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  9. Allow the cupcakes to cool completely before frosting with your favorite frosting.

Notes

Feel free to use cream cheese or buttercream frosting. You can also add a few extra chopped strawberries on top for garnish!
