Method
- Preheat the oven to 350°F (175°C) and line a cupcake tray with paper liners.
- In a bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs, one at a time, and then add vanilla extract.
- In a separate bowl, mix the flour, baking powder, and baking soda.
- Alternate adding the dry ingredients and buttermilk to the wet mixture, beginning and ending with the dry ingredients. Mix until just combined.
- Gently fold in the chopped strawberries.
- Spoon the batter into the cupcake liners, filling them about two-thirds full.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean.
- Allow the cupcakes to cool completely before frosting with your favorite frosting.

Notes
Feel free to use cream cheese or buttercream frosting. You can also add a few extra chopped strawberries on top for garnish!
