Ingredients
  

  • 2 1/2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 2 teaspoons Ground cinnamon
  • 1/2 teaspoon Ground nutmeg
  • 1/2 teaspoon Salt
  • 1 1/2 cups Granulated sugar
  • 2 large Eggs
  • 1 cup Pumpkin puree
  • 1/2 cup Vegetable oil
  • 1 teaspoon Vanilla extract
  • 8 oz Cream cheese
  • 1/2 cup Powdered sugar
  • 1/2 teaspoon Vanilla extract (for filling)

Method
 

  1. Preheat oven to 350°F (175°C). Grease or line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, combine the sugar, eggs, pumpkin puree, vegetable oil, and vanilla extract. Mix until smooth and well combined.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. In a separate bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  6. Fill each muffin cup halfway with the pumpkin batter. Then, drop a spoonful of the cream cheese mixture into the center of each muffin. Top with a little more pumpkin batter, covering the cream cheese completely.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
