Ingredients
  

  • 2 cups All-purpose flour
  • 1 1/2 tsp Baking powder
  • 1 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1 1/2 cups Sugar
  • 1/2 cup Butter
  • 3 Eggs
  • 2 cups Mixed dried fruits (raisins, currants, sultanas, etc.)
  • 1/4 cup Chopped candied peel
  • 1/4 cup Brandy or rum
  • 1 tsp Vanilla extract
  • 1/2 tsp Baking soda

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. In a bowl, whisk together flour, baking powder, cinnamon, nutmeg, and baking soda.
  3. In a separate bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  4. Add the flour mixture to the wet ingredients, alternating with the dried fruits and candied peel. Stir in the vanilla extract and brandy (or rum).
  5. Pour the batter into the prepared cake pan and bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool completely before slicing and serving. Enjoy your rich fruit plum cake!
