Base Ingredients
  • 1/2 cup pumpkin puree
  • 1 1/2 cups rolled oats
  • 1/4 cup ground flaxseed
  • 1/4 cup almond butter
  • 2 tablespoons maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon vanilla extract
Optional Toppings
  • 1/4 cup pumpkin seeds for topping

Method
 

  1. In a large mixing bowl, combine the pumpkin puree, rolled oats, ground flaxseed, almond butter, maple syrup, cinnamon, nutmeg, and vanilla extract. Stir until fully combined.
  2. Roll the mixture into 12 small balls, about 1 inch in diameter. Place them on a parchment-lined baking sheet or plate.
  3. Once rolled, refrigerate the pumpkin energy balls for at least 20 minutes to allow them to firm up.
  4. If desired, top each energy ball with a few pumpkin seeds for added texture and flavor.
