Ingredients
  

  • 1 can pumpkin puree
  • 1 can sweetened condensed milk
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1 box yellow cake mix
  • 1/2 cup unsalted butter melted
  • 1/4 cup chopped pecans optional

Method
 

  1. Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking pan.
  2. In a large mixing bowl, combine the pumpkin puree, sweetened condensed milk, eggs, cinnamon, nutmeg, and ginger. Mix until smooth.
  3. Pour the pumpkin mixture into the prepared baking pan, spreading it evenly.
  4. Sprinkle the dry cake mix evenly over the pumpkin mixture, then drizzle the melted butter over the top. Don’t stir the mixture.
  5. If using, sprinkle chopped pecans over the top of the cake mix.
  6. Bake for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool slightly before serving. Top with whipped cream if desired.
