Ingredients
  

Pumpkin Filling
  • 1 can pumpkin puree 15 oz
  • 1 can evaporated milk 12 oz
  • 3 large eggs lightly beaten
  • 1 cup granulated sugar
  • 2 tsp pumpkin pie spice
  • 1/2 tsp salt
Topping
  • 1 box yellow cake mix about 15 oz
  • 1/2 cup unsalted butter melted
  • 1/2 cup chopped pecans or walnuts optional for crunch

  • 9x13 inch baking dish

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. In a large bowl, whisk together pumpkin puree, evaporated milk, eggs, sugar, pumpkin pie spice, and salt until smooth.
  3. Pour the pumpkin mixture into the prepared baking dish.
  4. Evenly sprinkle the dry cake mix over the pumpkin filling — do not mix.
  5. Drizzle the melted butter over the cake mix, covering as much surface as possible. Top with nuts if using.
  6. Bake for 50–55 minutes, or until the top is golden brown and the center is set. Cool for 15 minutes before serving.
