  • 1 can evaporated milk 12 ounces
  • 3 large eggs beaten
  • 1 cup granulated sugar
  • 2 tsp pumpkin pie spice
  • 1/2 tsp salt
Topping
  • 1 box yellow cake mix dry mix only
  • 1 cup unsalted butter melted
  • 1/2 cup chopped pecans optional
  • whipped cream or vanilla ice cream for serving

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. In a large bowl, whisk together pumpkin puree, evaporated milk, eggs, sugar, pumpkin pie spice, and salt until smooth.
  3. Pour the pumpkin mixture evenly into the prepared baking dish.
  4. Sprinkle the dry yellow cake mix evenly over the pumpkin layer—do not stir.
  5. Drizzle melted butter evenly across the top, covering as much cake mix as possible.
  6. Optional: Sprinkle chopped pecans on top for added crunch and flavor.
  7. Bake for 45–50 minutes until the top is golden and slightly crisp.
  8. Cool for 15 minutes before serving. Serve warm with whipped cream or vanilla ice cream.
