Ingredients
  

  • 2 cups Pumpkin puree
  • 1 cup Sugar
  • 2 Eggs
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/2 teaspoon Ginger
  • 1/2 teaspoon Salt
  • 1 teaspoon Vanilla extract
  • 1 cup Milk
  • 1 1/2 teaspoons Baking powder
  • 1 1/2 cups All-purpose flour
  • 1/2 cup Butter
  • 1/2 cup Brown sugar

Method
 

  1. Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. In a large bowl, whisk together 2 cups of pumpkin puree, 1 cup of sugar, 2 eggs, 1 teaspoon of cinnamon, 1/2 teaspoon of nutmeg, 1/2 teaspoon of ginger, and 1/2 teaspoon of salt until smooth.
  3. Stir in 1 teaspoon of vanilla extract and 1 cup of milk, mixing well until combined.
  4. In a separate bowl, whisk together 1 1/2 cups of all-purpose flour, 1 1/2 teaspoons of baking powder, and 1/2 cup of brown sugar.
  5. Fold the dry ingredients into the pumpkin mixture, ensuring it’s evenly combined. Pour the batter into the prepared baking dish.
  6. Cut 1/2 cup of butter into small cubes and scatter them evenly over the top of the batter.
  7. Bake for 40-45 minutes, or until the top is golden and the center is set. Let the cobbler cool for 10 minutes before serving.
