Method
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
- In a bowl, whisk flour, baking soda, baking powder, salt, and spices.
- In another bowl, whisk pumpkin purée, oil, eggs, sugars, and vanilla until smooth.
- Fold the dry ingredients into the wet mixture until just combined.
- For the cheesecake filling: beat cream cheese, sugar, egg yolk, and vanilla until smooth.
- Spoon batter into muffin cups, filling halfway. Add a spoonful of cheesecake mixture, then top with more batter until 3/4 full.
- Use a toothpick to gently swirl the cheesecake into the pumpkin batter.
- Bake 20–22 minutes, or until a toothpick inserted into the muffin (avoiding the cheesecake center) comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes
For an extra touch, sprinkle cinnamon sugar on top before baking. Store muffins in the refrigerator for up to 4 days.
