Ingredients
  

  • 1 cup Pumpkin puree fresh or canned
  • 1 1/2 cups All-purpose flour
  • 1 tsp Baking powder
  • 1 tsp Ground cinnamon
  • 1/2 tsp Ground nutmeg
  • 1 cup Granulated sugar
  • 2 large Eggs
  • 1/2 cup Unsalted butter softened
  • 4 oz Cream cheese softened
  • 2 cups Powdered sugar
  • 1 cup Chocolate coating melted

Method
 

  1. Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking pan.
  2. In a medium bowl, mix together the flour, baking powder, cinnamon, and nutmeg.
  3. In a large bowl, beat together the pumpkin puree, sugar, eggs, and softened butter until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until smooth.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool completely, then crumble the cake into fine crumbs.
  7. In a separate bowl, mix the crumbled cake with cream cheese and powdered sugar to form a dough-like consistency.
  8. Roll the mixture into small balls and insert cake pop sticks. Dip the cake pops into melted chocolate, then set them on a parchment-lined tray.
  9. Let the cake pops cool completely before serving.
