Ingredients
  

  • 1 can pineapple slices in syrup, drained
  • 1/4 cup butter melted
  • 1/2 cup brown sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup milk
  • 1/2 cup sugar
  • 1/2 tsp vanilla extract

Method
 

  1. Preheat the oven to 350°F (175°C). Grease a round cake pan.
  2. Place the melted butter in the bottom of the pan and sprinkle the brown sugar evenly over it.
  3. Arrange the pineapple slices on top of the sugar layer, and set aside.
  4. In a bowl, combine the flour, baking powder, and sugar.
  5. In another bowl, whisk together the milk, egg, and vanilla extract.
  6. Pour the wet mixture into the dry ingredients and stir until combined.
  7. Pour the batter over the pineapple slices in the pan.
  8. Bake for 40-45 minutes, or until a toothpick inserted comes out clean.
  9. Let the cake rest for 10 minutes before inverting onto a serving plate. Serve warm.
