Ingredients
  

  • 4 oz German’s Sweet Chocolate melted
  • 2 cups Flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 1.5 cups Granulated Sugar
  • 1/2 cup Butter
  • 2 Eggs
  • 1 cup Buttermilk
  • 1 tsp Vanilla Extract
  • 1.5 cups Coconut shredded
  • 1 cup Pecans chopped
  • 3 Egg Yolks
  • 1 cup Sugar (for frosting)
  • 1/2 cup Butter (for frosting)
  • 1/2 cup Evaporated Milk

Method
 

  1. Preheat oven to 350°F. Grease and flour your cake pans.
  2. Melt the German's Sweet Chocolate in a microwave-safe bowl. Let cool slightly.
  3. In a large mixing bowl, combine flour, baking powder, baking soda, salt, and sugar. Add butter and mix until well combined.
  4. Add eggs, melted chocolate, buttermilk, and vanilla extract. Mix until smooth and creamy.
  5. Pour the batter evenly into the prepared pans. Bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  6. While the cake bakes, prepare the frosting. In a saucepan, combine sugar, butter, evaporated milk, and egg yolks. Cook over medium heat, stirring frequently until it thickens. Stir in the shredded coconut and chopped pecans.
  7. Allow the cake to cool for 10 minutes before removing it from the pans. Once completely cooled, frost the cake with the coconut-pecan frosting.
