Ingredients
  

Pumpkin Cake
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1 cup pumpkin puree not pie filling
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 tsp vanilla extract
Frosting
  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 2 cups powdered sugar sifted
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and spices.
  3. In a large mixing bowl, beat sugar, brown sugar, pumpkin puree, and oil until combined.
  4. Add eggs one at a time, then mix in vanilla extract until smooth.
  5. Gradually add dry ingredients to the wet mixture, mixing just until combined. Do not overmix.
  6. Pour batter into the prepared pan and bake for 35–40 minutes, or until a toothpick inserted comes out clean.
  7. Cool completely before frosting.
  8. For the frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla, beating until fluffy.
  9. Spread frosting evenly over the cooled cake and dust with cinnamon for decoration.

Notes
