- Preheat the oven to 350°F (175°C). Grease and flour 8 mini loaf pans.
- In a medium bowl, whisk together 1 1/2 cups of flour, 1 1/2 teaspoons of baking powder, and 1/4 teaspoon of salt.
- In a separate large bowl, cream 1/2 cup of butter and 3/4 cup of sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in 1 teaspoon of vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with 1/2 cup of milk. Mix until just combined.
- If desired, fold in 1/4 cup of chocolate chips for extra flavor and texture.
- Divide the batter evenly among the mini loaf pans, filling each about two-thirds full. Bake for 20-25 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
