Homemade Ice Cream Cake

A festive, colorful cake made with layers of soft sponge and creamy ice cream, topped with sprinkles and a cherry on top!

Ingredients
  

Cake Layer
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk room temperature
Ice Cream Layers
  • 3 pints ice cream assorted flavors like vanilla, strawberry, and chocolate
  • sprinkles for layering and decoration
  • cherries for topping

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line two 9-inch cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then add vanilla.
  4. Alternate adding dry ingredients and milk until combined. Pour into pans and bake 20–25 minutes.
  5. Cool cakes completely, then freeze them for at least 1 hour.
  6. Soften the ice cream slightly so it’s spreadable. Line a cake pan with plastic wrap and layer one cake round at the bottom.
  7. Spread one flavor of ice cream evenly, then freeze for 30 minutes. Repeat with remaining flavors, freezing between layers.
  8. Top with the second cake round and press gently. Freeze the whole cake for 2–3 hours.
  9. Once firm, frost with whipped cream or a thin layer of softened ice cream. Decorate with sprinkles and cherries.
  10. Freeze again until ready to serve. Slice with a warm knife for clean cuts.

Notes
