Ingredients
  

  • 2 lbs Beef stew meat
  • 3 large Carrots
  • 4 medium Potatoes
  • 1 large Onion
  • 4 cups Beef broth
  • 2 cloves Garlic
  • 2 Bay leaves
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 2 tbsp Olive oil

Method
 

  1. In a skillet, heat olive oil over medium heat. Brown the beef stew meat in batches, about 2-3 minutes per side. Transfer the meat to the crockpot.
  2. Peel and chop the carrots, potatoes, and onion. Add them to the crockpot along with the garlic, bay leaves, salt, and pepper.
  3. Pour the beef broth into the crockpot and stir to combine. Cover and cook on low for 8 hours, or until the beef is tender and the vegetables are cooked through.
  4. Remove the bay leaves before serving. Enjoy your hearty beef stew!
