  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
Wet Ingredients
  • 1 cup pumpkin puree
  • 1/4 cup honey
  • 2 large eggs
  • 1/4 cup unsweetened applesauce
Toppings
  • 1/4 cup pumpkin seeds for topping

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a loaf pan or line it with parchment paper.
  2. In a medium-sized bowl, whisk together the whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate large bowl, mix together the pumpkin puree, honey, eggs, and applesauce until smooth and well combined.
  4. Gradually add the dry ingredients into the wet ingredients, mixing until fully combined. Be careful not to overmix the batter.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula. Sprinkle the pumpkin seeds on top for added texture and flavor.
  6. Bake for 50 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
