Ingredients
  

  • 1 3/4 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup unsalted butter melted
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 2 1/2 cups powdered sugar
  • 1/2 cup unsalted butter softened
  • 1/4 cup heavy cream
  • 1 1/2 tsp vanilla extract

Method
 

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat together the sugar, eggs, buttermilk, melted butter, and vanilla extract until smooth and combined.
  4. Gradually add the dry ingredients to the wet ingredients and mix until combined. Pour in the boiling water and stir until the batter is smooth.
  5. Divide the batter evenly between the prepared pans and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  6. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  7. For the frosting, beat together the powdered sugar, softened butter, heavy cream, and vanilla extract until smooth and fluffy. Frost the cooled cakes and decorate with Halloween-themed toppings such as spiders or pumpkins!
