Ingredients
  

  • 2 1/2 cups All-purpose flour
  • 2 tsp Baking powder
  • 1 tsp Ground cinnamon
  • 1/2 tsp Ground nutmeg
  • 1/2 tsp Salt
  • 1 cup Unsalted butter softened
  • 1 1/2 cups Granulated sugar
  • 4 large Eggs
  • 1 tbsp Vanilla extract
  • 1/2 cup Whole milk
  • 1 cup Pumpkin puree
  • 8 oz Cream cheese softened
  • 4 cups Powdered sugar
  • 1 tsp Vanilla extract
  • 1/2 cup Heavy cream
  • as needed drops Food coloring red, yellow, and orange

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3 minutes. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and pumpkin puree.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.
  5. Divide the batter evenly between the three prepared cake pans. Use food coloring to tint the batter in three different shades of orange, red, and yellow for a colorful autumn effect.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  7. For the frosting, beat the softened cream cheese and powdered sugar together until smooth. Gradually add the heavy cream and vanilla extract, beating until fluffy and spreadable.
  8. Once the cakes are cooled, layer them with frosting between each layer and cover the entire cake with the remaining frosting. Decorate the top with fall-themed sprinkles or additional food coloring designs for a festive touch.
