Ingredients
  

Cake Batter
  • 2 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 2 cups sugar
  • 1.5 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 eggs
  • 1 cup buttermilk
  • 1 cup hot water
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
Coconut-Pecan Frosting
  • 1 cup evaporated milk
  • 1 cup brown sugar
  • 3 egg yolks lightly beaten
  • 1/2 cup butter
  • 1 tsp vanilla extract
  • 1.5 cups sweetened shredded coconut
  • 1 cup chopped pecans

Method
 

  1. Preheat the oven to 350°F (175°C). Grease and line two round cake pans with parchment paper.
  2. In a large bowl, mix flour, cocoa, sugar, baking soda, baking powder, and salt.
  3. Add eggs, buttermilk, oil, and vanilla. Beat until smooth, then stir in hot water to make a glossy batter.
  4. Pour the batter evenly into pans and bake for 30–35 minutes. Cool completely before frosting.
  5. To make frosting: combine evaporated milk, brown sugar, egg yolks, and butter in a saucepan. Cook over medium heat, stirring until thickened (about 10 minutes). Remove from heat, add vanilla, coconut, and pecans.
  6. Spread frosting between cake layers and on top. Decorate with extra pecans if desired.

Notes
