Ingredients
  

Cake Batter
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1 cup buttermilk room temperature
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup boiling water
Coconut-Pecan Frosting
  • 1 cup evaporated milk
  • 1 cup sugar
  • 3 egg yolks beaten
  • 1/2 cup butter unsalted
  • 1 1/2 cups shredded coconut sweetened
  • 1 cup pecans chopped
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. In a bowl, mix flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat sugar, oil, eggs, and vanilla until fluffy. Add buttermilk gradually.
  4. Combine wet and dry ingredients, then stir in boiling water until smooth.
  5. Divide batter into pans and bake for 30–35 minutes. Cool completely.
  6. For frosting, cook milk, sugar, yolks, and butter over medium heat until thickened. Stir in coconut, pecans, and vanilla.
  7. Layer cakes with frosting between and on top. Decorate as desired.
