- Preheat your oven to 350°F (175°C). Line a muffin tin with paper cupcake liners.
- In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2 minutes.
- Add the eggs one at a time, beating well after each addition. Then add the vanilla extract and mix well.
- Gradually add the dry ingredients into the wet mixture, alternating with the milk and pumpkin puree, mixing until combined.
- Divide the batter evenly among the cupcake liners, filling each about 2/3 full. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Remove from the oven and allow the cupcakes to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
- For the frosting, beat the softened butter and powdered sugar together until smooth. Add the milk, vanilla extract, and food coloring, mixing until the frosting reaches your desired consistency and color.
- Frost the cooled cupcakes with the colored frosting and decorate with fall-themed decorations, such as fondant pumpkins and leaves.
