Ingredients
  

Vanilla Cake Base
  • 2 ½ cups cake flour sifted
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter softened
  • 1 ¾ cups granulated sugar
  • 4 large eggs room temperature
  • 1 cup whole milk room temperature
  • 2 tsp vanilla extract
Berry Compote Filling
  • 2 cups mixed berries fresh or frozen
  • 2 tbsp sugar
  • 1 tsp lemon juice
Whipped Cream Frosting
  • 2 cups heavy whipping cream cold
  • ½ cup powdered sugar sifted
  • 1 tsp vanilla extract
  • fresh berries and edible gold decorations for garnish

Equipment

Method
 

  1. Preheat oven to 350°F (175°C) and grease two 8-inch pans.
  2. Whisk flour, baking powder, and salt together.
  3. Beat butter and sugar until light and fluffy, then add eggs one at a time followed by vanilla.
  4. Alternate adding dry ingredients with milk until smooth. Divide into pans.
  5. Bake for 30–35 minutes or until golden. Let cool completely.
  6. For the compote, simmer berries, sugar, and lemon juice for 10 minutes until thickened. Cool before use.
  7. Whip cream with powdered sugar and vanilla until soft peaks form.
  8. Layer cake with berry compote and whipped cream. Frost the outside and decorate with berries and gold accents.
