  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup unsalted butter softened
  • 1 1/4 cups sugar
  • 3 large eggs
  • 1 cup pumpkin puree
  • 1 tsp vanilla extract
  • 1/2 cup milk

Method

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition.
  4. Stir in the pumpkin puree, vanilla extract, and milk until smooth and well-combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.
