Cookie Cake Base
  • 1 cup unsalted butter softened
  • 3/4 cup brown sugar packed
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup chocolate chips
Decoration
  • 1 cup buttercream frosting for piping
  • 10 mini cookies for topping
  • sprinkles optional

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper.
  2. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy using an electric mixer.
  3. Add egg and vanilla extract, mixing until combined.
  4. In a separate bowl, whisk flour, baking soda, and salt. Gradually add dry ingredients to the wet mixture and stir until combined.
  5. Fold in chocolate chips. Spread the dough evenly in the prepared pan.
  6. Bake for 20–25 minutes, until edges are golden but the center remains soft. Cool completely before decorating.
  7. Pipe buttercream frosting around the edge of the cooled cookie cake. Top with mini cookies and colorful sprinkles for a festive finish.
