Ingredients
  

Cake Batter
  • 2 1/2 cups all-purpose flour sifted
  • 1 1/2 cups granulated sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tbsp unsweetened cocoa powder
  • 1 1/2 cups vegetable oil
  • 1 cup buttermilk room temperature
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 tsp white vinegar
  • 2 tbsp red food coloring
Cream Cheese Frosting
  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 4 cups powdered sugar sifted
  • 1 tsp vanilla extract

Method
 

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch cake pans.
  2. In a large bowl, whisk together flour, sugar, baking soda, salt, and cocoa powder.
  3. In another bowl, beat together oil, buttermilk, eggs, vanilla, vinegar, and red food coloring until smooth.
  4. Combine the wet and dry ingredients, mixing until just blended.
  5. Divide the batter evenly between the pans and bake for 30 minutes or until a toothpick comes out clean.
  6. Cool cakes completely before frosting.
  7. To make frosting: Beat cream cheese and butter until fluffy. Gradually add powdered sugar and vanilla until smooth.
  8. Frost the cooled cakes, layering and decorating as desired.
