Ingredients
  

Crab Mixture
  • 1 lb lump crab meat fresh or canned, drained
  • 1/2 cup breadcrumbs plain or panko
  • 1/4 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice freshly squeezed
  • 1 egg lightly beaten
  • 2 tbsp chopped parsley fresh
  • 1/2 tsp Old Bay seasoning
  • salt and pepper to taste
For Frying
  • 2 tbsp olive oil
  • 1 tbsp butter

Method
 

  1. In a large bowl, combine crab meat, breadcrumbs, mayonnaise, Dijon mustard, lemon juice, egg, parsley, and Old Bay seasoning. Mix gently to avoid breaking up the crab.
  2. Form the mixture into 4 equal patties, about 1 inch thick. Place them on a plate and refrigerate for 15–20 minutes to firm up.
  3. Heat olive oil and butter in a skillet over medium heat. When hot, add the crab cakes and cook for 4–5 minutes per side until golden brown and crispy.
  4. Remove from the skillet and drain on paper towels. Serve warm with lemon wedges or tartar sauce.
