- In a large bowl, combine crab meat, breadcrumbs, mayonnaise, Dijon mustard, lemon juice, egg, parsley, and Old Bay seasoning. Mix gently to avoid breaking up the crab.
- Form the mixture into 4 equal patties, about 1 inch thick. Place them on a plate and refrigerate for 15–20 minutes to firm up.
- Heat olive oil and butter in a skillet over medium heat. When hot, add the crab cakes and cook for 4–5 minutes per side until golden brown and crispy.
- Remove from the skillet and drain on paper towels. Serve warm with lemon wedges or tartar sauce.
