Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
Wet Ingredients
  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 4 large eggs
  • 1 tbsp vanilla extract
Fruits & Add-Ons
  • 2 cups mixed dried fruits chopped
  • 1/2 cup chopped nuts optional
  • 1/4 cup orange juice

Method
 

  1. Preheat oven to 325°F (160°C) and line an 8-inch cake pan with parchment paper.
  2. Whisk flour, baking powder, cinnamon, and nutmeg together.
  3. Cream butter and brown sugar until fluffy.
  4. Beat in eggs one at a time, then add vanilla.
  5. Gently fold dry ingredients into wet ingredients.
  6. Mix in dried fruits, nuts, and orange juice.
  7. Pour batter into pan and bake 80–90 minutes until firm.
