Ingredients
  

Cake Batter
  • 1 3/4 cups all-purpose flour sifted
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 cups granulated sugar
  • 2 large eggs room temperature
  • 1 cup buttermilk room temperature
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup hot coffee or boiling water enhances chocolate flavor
Chocolate Frosting
  • 1 cup unsalted butter softened
  • 3 cups powdered sugar sifted
  • 3/4 cup unsweetened cocoa powder
  • 1/4 cup milk add more as needed
  • 1 tsp vanilla extract
Decoration
  • fresh strawberries and blueberries for garnish
  • chocolate shavings or curls optional

Method
 

  1. Preheat the oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, salt, and sugar.
  3. Add eggs, buttermilk, oil, and vanilla. Beat with an electric mixer until smooth.
  4. Gradually pour in hot coffee, mixing until the batter is glossy and well combined. The batter will be thin — that’s perfect.
  5. Divide batter evenly between pans and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely before frosting.
  7. For the frosting, beat butter until creamy. Add powdered sugar, cocoa, milk, and vanilla; beat until fluffy and spreadable.
  8. Frost between the layers and over the top. Garnish with strawberries, blueberries, and chocolate shavings.
