- Preheat the oven to 350°F (175°C). Grease and line two 8-inch cake pans with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
- In another bowl, beat oil, brown sugar, and granulated sugar until well blended. Add eggs one at a time and mix until smooth.
- Stir in grated carrots, crushed pineapple, and nuts. Gradually add dry ingredients and mix until just combined.
- Pour batter evenly into prepared pans. Bake for 40–45 minutes or until a toothpick inserted into the center comes out clean.
- Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely before frosting.
- For the frosting, beat cream cheese and butter until creamy. Add powdered sugar, vanilla, and orange zest; beat until fluffy.
- Frost between layers and over the top. Garnish with chopped nuts or carrot curls if desired.
