Ingredients
  

Cake Batter
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 1 cup vegetable oil
  • 1 cup granulated sugar
  • 1 cup brown sugar packed
  • 4 large eggs
  • 3 cups grated carrots about 4–5 medium carrots
  • 1 cup crushed pineapple drained
  • 1/2 cup chopped walnuts optional
Cream Cheese Frosting
  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 4 cups powdered sugar
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round pans.
  2. Whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a bowl.
  3. In another bowl, beat oil, sugars, and eggs until smooth.
  4. Add dry mixture to wet ingredients, stirring until just combined.
  5. Fold in carrots, pineapple, and walnuts (if using).
  6. Divide batter evenly into pans. Bake 40–45 minutes, until a toothpick comes out clean.
  7. Cool completely before frosting.
  8. For frosting, beat cream cheese and butter until fluffy. Add powdered sugar and vanilla, mixing until smooth.
  9. Frost cooled cakes, stack, and serve.
