Cake Batter
  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 2 cups apples peeled and diced

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch cake pan.
  2. Whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a bowl.
  3. Cream butter and sugar until fluffy. Add eggs one at a time, then stir in vanilla.
  4. Alternate adding dry ingredients and milk to the butter mixture, mixing just until combined.
  5. Fold in diced apples gently with a spatula.
  6. Pour batter into pan and bake for 40–45 minutes, or until golden and a toothpick comes out clean.
  7. Cool for 20 minutes before slicing and serving.
