Ingredients
  

Cake Batter
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1 cup sour cream
  • 1 tsp vanilla extract
Streusel Topping
  • 0.75 cup brown sugar
  • 1 tbsp ground cinnamon
  • 0.25 cup all-purpose flour
  • 3 tbsp unsalted butter cold and cubed

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch tube pan or bundt pan.
  2. In a small bowl, combine brown sugar, cinnamon, and flour for the streusel. Cut in the cold butter until crumbly. Set aside.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
  4. Mix in sour cream and vanilla extract until smooth.
  5. In another bowl, whisk flour, baking powder, baking soda, and salt. Gradually add dry ingredients to the wet mixture.
  6. Spread half the batter into the prepared pan. Sprinkle half of the streusel mixture over it. Add the remaining batter and top with the rest of the streusel.
  7. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool in the pan for 15 minutes before transferring to a wire rack. Serve warm or at room temperature.
