Ingredients
  

Cookie Dough
  • 2 ¼ cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup unsalted butter softened
  • ¾ cup brown sugar packed
  • ¼ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 cup chocolate chips
Buttercream Frosting
  • 1 cup unsalted butter softened
  • 3 cups powdered sugar sifted
  • 2 tbsp milk or cream as needed
  • 1 tsp vanilla extract
  • mini cookies for decoration

Method
 

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round pans.
  2. In a bowl, whisk flour, baking soda, and salt. Set aside.
  3. In another bowl, beat butter and sugars until creamy. Add egg and vanilla extract.
  4. Gradually mix in dry ingredients, then fold in chocolate chips.
  5. Divide dough between pans and spread evenly. Bake for 20–25 minutes or until golden brown.
  6. Cool completely before frosting.
  7. For frosting, beat butter until fluffy. Add powdered sugar gradually, then milk and vanilla until smooth.
  8. Layer one cookie base, spread frosting, add the second cookie layer, and decorate with mini cookies.
