  • 1 ½ cups Sugar
  • ¾ cup Champagne (dry) For the best flavor, choose dry champagne
  • ½ cup Unsalted butter Room temperature
  • 3 large Eggs
  • 1 teaspoon Vanilla extract
  • 2 teaspoons Baking powder
  • ½ teaspoon Salt

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour two round cake pans.
  2. In a bowl, mix the flour, baking powder, and salt. Set aside.
  3. In a separate large bowl, cream together the butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, followed by the vanilla extract.
  5. Gradually mix in the dry ingredients, alternating with the champagne, until smooth.
  6. Pour the batter into the prepared cake pans and bake for 30 minutes, or until a toothpick inserted comes out clean.
  7. Allow the cakes to cool for 10 minutes, then transfer to wire racks to cool completely.
  8. Once cooled, frost the cakes with champagne frosting or glaze and serve.
