- Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, and cinnamon. Set aside.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in the eggs and vanilla extract until smooth.
- Alternate adding the flour mixture and buttermilk, mixing well after each addition. Fold in the diced apples.
- Pour the batter into the prepared pan, smoothing the top with a spatula.
- For the streusel topping, mix together flour, sugar, and melted butter until crumbly. Sprinkle over the batter.
- Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
