Ingredients
  

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 2 cups diced apples peeled
Streusel Topping
  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter melted

Method
 

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and cinnamon. Set aside.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in the eggs and vanilla extract until smooth.
  4. Alternate adding the flour mixture and buttermilk, mixing well after each addition. Fold in the diced apples.
  5. Pour the batter into the prepared pan, smoothing the top with a spatula.
  6. For the streusel topping, mix together flour, sugar, and melted butter until crumbly. Sprinkle over the batter.
  7. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
