Ingredients
  

  • 2 cups All-purpose flour
  • 1 1/2 teaspoons Baking powder
  • 1/2 teaspoon Baking soda
  • 1 cup Sugar
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Salt
  • 1/2 cup Butter
  • 2 Eggs
  • 1 cup Sour cream
  • 1 teaspoon Vanilla extract
  • 2 cups Apple, peeled and chopped
  • 1/2 cup Brown sugar
  • 1/2 teaspoon Cinnamon (for topping)

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a medium-sized bowl, whisk together 2 cups of flour, 1 1/2 teaspoons of baking powder, 1/2 teaspoon of baking soda, 1 teaspoon of cinnamon, and 1/4 teaspoon of salt.
  3. In a large bowl, cream together 1/2 cup of butter and 1 cup of sugar until light and fluffy. Add 2 eggs, one at a time, and beat well after each addition. Stir in 1 cup of sour cream and 1 teaspoon of vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Gently fold in 2 cups of chopped apples.
  5. Pour the batter into the prepared cake pan and spread it evenly. In a small bowl, mix together 1/2 cup of brown sugar and 1/2 teaspoon of cinnamon, then sprinkle this topping over the cake batter.
  6. Bake the cake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
