  • 2 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 1/2 teaspoon Salt
  • 1/2 cup Unsalted butter
  • 1 cup Granulated sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1/2 cup Sour cream
  • 2 cups Apple, peeled and chopped
  • 1/2 cup Brown sugar
  • 1/4 cup All-purpose flour (for streusel)
  • 1/2 teaspoon Cinnamon (for streusel)
  • 1/4 cup Cold unsalted butter (for streusel)

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, combine the flour, baking powder, baking soda, cinnamon, and salt.
  3. In a large bowl, cream the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the sour cream. Mix until just combined. Fold in the chopped apples.
  5. In a small bowl, combine the brown sugar, flour, and cinnamon for the streusel topping. Cut in the cold butter until the mixture resembles coarse crumbs. Sprinkle the streusel over the batter.
  6. Bake for 45 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool for 10 minutes before removing it from the pan. Serve warm or at room temperature.
