- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a medium bowl, combine the flour, baking powder, baking soda, cinnamon, and salt.
- In a large bowl, cream the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the sour cream. Mix until just combined. Fold in the chopped apples.
- In a small bowl, combine the brown sugar, flour, and cinnamon for the streusel topping. Cut in the cold butter until the mixture resembles coarse crumbs. Sprinkle the streusel over the batter.
- Bake for 45 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool for 10 minutes before removing it from the pan. Serve warm or at room temperature.
