- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a small saucepan, heat the apple cider over medium heat until it reduces to about half its volume, approximately 10 minutes. Set aside to cool.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
- In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 3 minutes. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with the reduced apple cider and milk. Mix until just combined.
- Pour the batter into the prepared cake pan and smooth the top. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the cinnamon-sugar topping by combining cinnamon and sugar in a small bowl.
- Once the cake is done, remove it from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.
- While the cake is still warm, sprinkle the cinnamon-sugar topping evenly over the top for a sweet, crunchy finish.
